Calling all pickle lovers! A tangy and creamy dill pickle salad dressing recipe made with pickle juice, avocado, and olive oil.
Did anyone else notice the little heart in the picture above. Legend has it that only those who truly love pickles are able to see it.
And that's when we will learn who will be totally disgusted or totally on board with today's dill pickle salad dressing recipe. I'm not here to judge, but if you don't like pickles you're doing life wrong.
This is coming from the girl who ate pickle sandwiches. As in just bread, a little bit of mayo, and a mountain of dill chips. The ladies at the deli station in our college dining hall looked at me like I was crazy. Didn't stop me.

- avocado
- olive oil
Instructions
In a food processor or high-powered blender, combine 1 ½ cups of dill pickle juice and the flesh from 1 ripe avocado on high power.
Turn speed down to low, and slowly stream in ¼ cup of olive oil until fully combined. Store in the refrigerator for up to 5 days.
Pro Tips:

- If you like a little added texture, add a couple tablespoons of chopped pickle.
- No avocado? Make this dill pickle vinaigrette instead!
FAQs
Can you make this dressing without a food processor?
To get that creamy texture, it's best to use a food processor or high powered blender. You could also use an immersion blender, but without one it is hard to fully blend avocado.
How long does this dressing last?
It can keep up to 5 days in the refrigerator in a sealed container.
Money-Saving Tips for this Dressing
Use store brands. Utilize store brands for a more affordable option that doesn't sacrifice flavor or quality.
Buy in bulk. Purchase items that you use often like oil in larger containers for a more cost-effective option.

Funny ! My favorite treat after school was pickle sandwiches with mayo and Velvetta cheese back in the 70's. When I'm not feeling well...that's still one of my comfort foods! Your my kinda a people! Trying the recipe right now. Throwing pickle juice down the drain induces an episode of mourning. Something I don't want to experience 🙂

This is delicious! I served it over a side salad with bacon cheeseburger casserole!! YUM! Oh also I didn't quite have enough pickle juice so I used a mixture of pickle juice, pickled okra juice and banana pepper juice!

This looks great! I love dill pickle flavoring when it comes to snacks and even sunflower seeds. So I think this would be a great dressing to try. I'm curious what type of salad / food I'd want to serve it with, but I will figure it out! Thank you for sharing your recipe!

I use dill pickle juice in homemade pimento cheese, you can use less mayo and it is yummy

What could I use instead of avacodo?
Reply
Emily Cooper
You could simply not use it, but it wouldn't be a creamy dressing. I do that all the time when I'm lazy. 🙂

Thanks for the dill pickle sandwich ideas. I have been eating dill pickle and peanut butter sandwiches all my life and I just found an amazing dill Pickle juice recipe that is great. I don't necessarily like avacados but this looks so good, I have to try it!

Pickles and peanut butter are my favorites, I can't believe I haven't tried them together yet!

If you do not like avacados and you like peanut butter I would try the peanut butter almost like a peanut sauce with dill flavor like the consistency of Asian peanut dressing
Reply
Emily Cooper
Oh you're talking my language Janelle! Can't wait to try this with peanut butter!

This was super easy to make tonight. Husband and I just started a Keto diet and needed a tasty low carb high fat dressing. We make homemade pickles and just finished a jar off so pickle juice was easy to find! Thanks for the recipe! We will try it on our salad tomorrow.

I want to want to try this, as much as I love pickles, but I detest avocados. Any suggestions for substitutions?
I, too, ate pickle sandwiches. But no mayo. I always used peanut butter. Oh my that is a great combination.

I hate to have to bring this to your attention, but you pour it down the CHUTE not the SHOOT. Two different things, spelled differently, sound the same, like pear and pair or knight and night. They are called hom*oohones.

Emily Cooper
Ah thanks Herb! Don't know where my brain was on that one. All fixed!

Is there something I could substitute for the avocado? My family is not a big fan.
Reply
Emily Cooper
Hmm I haven't tried anything else for a creamy component, but know that you can't really taste the avocado in it. You can also make a vinaigrette-type of dressing and leave it out entirely. Hope this helps!

I wanna try this. My only problem is I love Bubbies pickles but always drink the pickle juice as I eat one. Will try my best to save some for this recipe. Especially since I love avocado dressing.

I made homemade pickles. So my left over juice had fresh dill, garlic, red paper flakes and peppercorns. I blended it all up with a little grey poupon, a little mayo and an avocado. I loved it. Can't wait to make more pickles then use the juice again for a dressing. I might even have some small pickle chunks in my dressing. Who else was already putting pickles.in the salad? I love pickles and now this dressing makes me so happy. So sad I didn't know of this years ago. All that time wasted 🙁
